Probably this could be the easiest black pepper chicken to prepare in a jiffy. It is a good dish to serve as One Dish Meal with the tasty sauce which is not too spicy. You can use green/red capsicum to replace the green/red chillies. You can also use yellow onions instead of Bombay onions. It is all okay.
3 deboned chicken thighs – cut into bite size pieces
1/2 tbsp each light soy sauce, oyster sauce, sweet soy sauce and 1 tsp ground black pepper
1 red chilli – seeded and cut diamond shape
1 green chilli – seeded and cut diamond shape
1 bombay onion – peeled and cut rings
some chopped shallots, garlic and ginger
1/2 tbsp each light soy sauce, oyster sauce and sweet soy sauce
1/2 tsp ground black pepper
1 tsp cornstarch + 2 tbsp water [for thickening]
- Marinate the chicken pieces with marinade for at least 30 minutes, while you prepare the other ingredients.
- Heat up wok, add 1/2 tbsp oil, saute chopped ginger, garlic and shallots until fragrant and slightly brown. Add in black pepper. Add in the marinated chicken pieces. Continue to stir fry until chicken pieces are firm.
- Pour in the seasoning sauce, continue to stir fry until almost cooked. Add in some water. Bring to oil until chicken is cooked through. Add in Bombay onions, chillies and spring onion.
- Thicken sauce with cornstarch water. Dish up to serve.
